Reality star Kitten Dowden from "Bayou Billionaires" shares her tasty Gator Sauce Piquant recipe.

Have you ever tried gator meat?

Ingredients for stock:
4 pounds gator
1 large onion
1 carrot sliced
2 bay leaves
4 cloves garlic smashed
1/2 tsp. black pepper

In a one gallon heavy bottomed stockpot, place all ingredients and enough salted water to cover by 2 inches. Bring mixture to a rolling boil then reduce to simmer and skim off impurities. Cook one hour or until gator is tender. Strain, reserve stock, discard vegetables and set gator meat aside.

Ingredients for sauce piquant:
1 cup vegetable oil
1 cup flour
1 cup diced onions
1 cup diced celery
1 cup sliced green onions
1 cup diced bell peppers
1 cup chopped parsley
2 tbsp minced garlic
1 (8ounce) can tomato sauce
1 cup diced tomatoes
1 tbsp diced jalapenos
2 bay leaves
1/2 tsp. thyme
1/2 tsp. basil
Salt and pepper to taste

Directions:
In a one-gallon heavy bottomed pot, heat oil over medium high heat. Whisk in flour, stirring constantly until dark brown roux is achieved. Add onions, celery, bell peppers and garlic. Sauté 3 to 5 mins.

Blend in tomato sauce, diced tomatoes and jalapeños. Add bay leaves, thyme and basil. Slowly add stock stirring constantly.

Bring to a low boil then reduce heat to simmer and cook 30 to 45 minutes. Chop gator into bite size pieces and gently stir in gator meat. Season with salt and pepper. (Add stock to retain volume and thickness if needed.)

Add green onions and parsley, adjust seasonings if necessary.

Serve over rice and enjoy!
