Recipes for 4 of Miss Robbie's Famous Side Dishes

Miss Robbie and her son Tim, from OWN's "Welcome to Sweetie Pie’s," taught Anderson how to make their famous honey-glazed chicken, but their restaurant also has a variety of soul food-inspired side dishes.

You, too, can make some of Miss Robbie's side dishes by following the simple recipes below for her candied yams, green beans, crazy corn and sour cream and chive mashed potatoes.

 

Candied Yams
Ingredients
3 large sweet potatoes
8 tablespoons butter 2 tablespoons margarine
1 1/3 cup sugar
1-1/2 teaspoons vanilla extract
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon 
2/1/2 cups water


Directions
Peel the sweet potatoes and cut them in half the long way (tip to tip), then cut each half into 3/4 inch slices.
Melt the butter and margarine in a pot. Add sugar, nutmeg cinnamon, vanilla, and water and bring to a boil.
Add sweet potatoes to pot and stir. Reduce heat to low and cover.
Cook for about 45 minutes to an hour or until potatoes are "candied.” They should be tender but a little hard around the edge. Serve hot.


 
Green Beans
Ingredients
6 cups frozen green beans
1 small russet potatoes peeled and cubed
1 1/2 cup of water
5 tablespoons chicken stock
4 tablespoons butter 
1 1/3 teaspoon granulated garlic
2 tablespoons chopped onions
1/2 teaspoon crushed red pepper
4 tablespoons sugar
Salt and pepper to taste
 
Directions
In a medium pot bring water, butter, and chicken stock to a boil. 
Add garlic and potatoes. Boil until potatoes begin to soften, approx. 10 min.
Reduce heat and add green beans, onions, red pepper, and sugar.
Simmer for 10 minutes or until green beans are tender.


 

Crazy Corn

5 cups fresh or frozen corn
4 tablespoons butter
6 tablespoon sugar
1/2 teaspoon pepper
1/2 teaspoon granulated garlic
1/2 cup onion chopped
1/2 cup green bell pepper chopped
1/2 cup red bell pepper chopped

(Serves 4)

Directions:

  • In the same frying skillet that chicken was prepared in, melt butter over medium heat and add 1/2 cup of chicken oil from earlier recipe.  
  • Add green peppers, red peppers and onions, then saute.  
  • Add garlic, sugar and pepper to skillet, and once sugar is dissolved, add corn and reduce heat.  
  • Let corn cook for 15 minutes or until soft.



Sour Cream and Chive Mashed Potatoes

5 Russet potatoes, peeled and cubed
1/3 cup and 1 tablespoon warm milk
1/2 cup sour cream
4 tablespoons butter
1/2 teaspoon pepper
1/2 cup of chives
Salt to taste
Alteration: add 3 tablespoons of Parmesan cheese

 

Directions:

  • Place potatoes in a saucepan and cover with water. Cover and bring to a boil; cook for 20-25 minutes or until very tender. Drain well.  
  • Add milk, butter, and pepper; mash until light and fluffy.
  • Stir in sour cream and top with chives.

I would love to have Sweetie Pie's corn Bread Recipe. And also do Sweetie Pie have a cookbook out yet? if so where can I buy it, I am a big fan of hers.

Why not add a "print" icon? I tried to highlight the recipes to print just them but got 11 pages including the recipes.
