Rocco's Brownie Cupcake Recipe
Anderson has trouble resisting a cupcake. This recipe will help anyone with a similar sweet tooth for the irresistible confection.

These chocolate cupcakes are not only moist and delicious, they're good for you! They are packed with black beans, and we use a widely available gluten-free flour mix to replace the wheat flour, so they are 100% gluten-free as well.
Chocolate Brownie Cupcake with Cream Cheese Icing and Chocolate Chips
Yield: 32 mini cupcakes
Prep time: approximately 25 minutes, bake time: approximately 15 minutes
Ingredients:
1 15-ounce can black beans, rinsed and drained
¾ cup raw agave nectar
¾ cup Egg Beaters
1 teaspoon vanilla extract
1 ½ cups unsweetened cocoa powder
3 tablespoons gluten-free all purpose baking flour (such as Bob's Red Mill)
1 tablespoon butter, melted
1 teaspoon instant espresso powder
5 egg whites
5 tablespoons fat-free cream cheese, room temperature
5 tablespoons vanilla-flavored, sugar-free, fat-free pudding (such as Jell-O)
96 mini dark chocolate chips
Method:
1. Preheat oven to 325˚ F.
2. Line 32, 1 ¾-inch cupcake bake cups with paper liners. Lightly coat the inside of each paper liner with cooking spray.
3. Add the beans, agave, Egg Neaters and vanilla extract to a blender. Cover and blend until very smooth. Scrape out into a large bowl and add the cocoa powder, baking flour, butter, and espresso powder. Whisk until smooth.
4. In a large bowl, beat the egg whites with an electric mixer using clean beaters on high speed until stiff. Fold in the egg whites into the bean mixture in three separate additions, making sure to keep as much volume as possible. Spoon the batter into the paper liners. Bake about 15 minutes or until the tops spring back when lightly touched.
5. Meanwhile, mix the cream cheese and pudding with a whisk until smooth. Scrape the icing into a small piping bag.
6. Remove the cupcakes and move to a wire rack to cool completely. Pipe the icing onto the cupcakes and top with 3 chocolate chips each.
Tips:
1. Use a 1 ounce ladle to easily and evenly spoon the cupcake batter into each paper liner.
Per serving:
55 calories, 1.2 g fat (1g sat, 0g mono, 0g poly), 1mg cholesterol, 94mg sodium, 11g carbohydrate, 2g fiber, 3g protein

What is egg beaters? Im in New Zealand and have never heard of this product (only the appliance) is there another name this goes by or a brand name that I can search?

No, the "selection" part won't work. When you hit print, it unselects everything and you get ALL the pages.
I noticed some said they got 15 pages. Just wanted to let you know you should be able to highlight the info you want and when you hit print there should be a spot to click on selection, or also you could also not highlight but when you into print there should be a spot to click that says pages and you could put 1-2 or 1-3 (however many pages you want) that way you won't get all those pages. Hope this helps. Anderson love your show and printing out those really good and healthy recipes.
I just made these. Used agave but no stevia. The agave is a low glycemic index sweetener but it might need the stevia. Moist. Texture not at all of regular brownies. I think The icing will help.

My children and significant others came to my house for Thanksgiving...two are Vegans, three are gluten free and I am just trying to eat as healthy as I can. I worked hard to accomadate all life styles, as all of the dishes were gluten free. I had a vegan selection and a turky eater selection. Got the turkey fresh from a farm, no hormones, free range etc. Soooo, I was very excited to see a gluten free cupcake recipe on T.V. yet! Thank you so much. I am already using Stevia and Agave yum! A show on the recent issue "Massachusetts Sues 5 Major Banks Over Foreclosure Practices" might be in order and of interest to a majority of your viewers.
Of course this would only apply to those who have lost their homes, are on the verge of losing their homes, lost their jobs and have no hopes of getting a job, etc. etc.
I think a comprehensive show on what has happened to middle class America is in line; why they will never be middle America again, why they are not being provided help with their mortgages despite what the Obama govt proposed and WHY they have to live with this frustratiing situation.
I think I have expressed my opining in the incorred site, but I could not find another place to vent my anger.
