Grandma Helen's Holiday Dressing
3 medium onions, chopped
3 cups celery, chopped
1 1/2 cups melted butter
14 cups fresh loaf bread cubed and dried (do this 2 days before you're making it)
2 eggs beaten
3/4 cup hot chicken broth (low sodium)
2T poultry seasoning sage to taste, not too much
1 1/4t. salt
1/4 t. pepper
1 lb. pork sausage cooked and drained well
Cook the celery and the onion in the butter until tender.
Add the bread cubes.
Add the remaining ingredients and 2 beaten eggs.
Use chicken broth to keep the mixture wet.
The dressing should be moist, but not too runny.
Bake in rectangle pan at 325 degrees for 20 to 25 minutes, until brown and crusty on top.
